Grilled Peach Arugula Salad

It’s that time of year again, I’m all for eating local, sustainable organic produce although, I can’t find the peach trees or blueberry bushes here in the subtropical sunny south! Imported from our southern sister state Georgia, are some of the best peaches I’ve ever tasted…. of course next to Fennville Michigan peaches, and Grand Haven Michigan blueberries,  just saying!  ;D  So fire up the grill, it’s too hot in the kitchen!

This is a super simple summer salad, is almost desert!

Grilled Peaches:

  • 4 Peaches
  • 1-2 Tbs Unsalted Butter
  • 1 Tbs Agave Nectar (can use honey)
  • Cinnamon

Method To The Madness:

Wash peaches well (most are sprayed), cut open & take out the peach pits.  Melt butter in ramekin, add agave nectar stir together & brush on peaches, flesh side up, sprinkle with cinnamon.   Grill on medium heat (300 degrees) until tender, I grilled these with the lid open for 7-10 minutes just to get charred a bit.

Who said grilling is just for meat eaters?

Even if the peaches are not quite ripe, the grill & special sauce will make them sweet!

Now for the amazing drizzle of goodness!

Balsamic Reduction:

  • 1/2 Cup Balsamic Vinegar
  • 1/4 Cup Agave Nectar (can use honey)
  • 1 Tbs Unsalted Butter

Method To The Madness:

In a heavy sauce pan combine all three ingredients, simmer on low heat stirring almost continuously until thickened.  This will burn very easily if left unattended!

Oh My Goat-ness!!  This is like crack in a ramekin! ;D…..

Arugula Salad Assembly:

I like using arugula, the bitter leaves sets off the sweetness of everything else.  You can use baby spinach or any other greens, sliced grilled peaches, a handful of blueberries, crumbles or slices of goat cheese & drizzle balsamic reduction. Don’t forget a couple twist of fresh cracked black pepper! Four peaches are enough for 2-3 salads.

In a perfect world, I would have added thick sliced hickory smoked BACON!  I didn’t have any on hand this time around,  it would have added the perfect saltiness to the sweet symphony of flavor.

Perfect for a light dinner paired with a oak barrel, buttery chardonnay or served with a tangy spicy BBQ chicken on the grill is also one of my favorites!

Even Baby Diddy loves goat cheese with her peaches!
