I swore I wasn’t going to post anymore food recipes before doing something un-food related, well….. this will only take a second, it was too simple not to share.
This is maybe one of the easiest cookie recipes known to man! If you screw this one up, you need to turn in your spatula AND cookie sheet! With only four ingredients and approximately a half hour total, you should have perfect peanut butter cookies for any last minute occasion or late night craving.
I’m not sure where I came across this recipe, could have been Foodgawker, someones blog or a cookbook on the shelf. The recipe is as follows:
- 1 cup all-natural crunchy or smooth peanut butter (I like smooth)
- 1 cup sugar (1/2 cup brown sugar and 1/2 cup granulated sugar)
- 1 egg
- 1 teaspoon baking soda
Method to the Madness:
Preheat oven to 350 degrees. Grease a baking sheet with butter (I use canola oil) and set aside. In a mixer combine peanut butter and sugars (you can just use white) until well combined, about 2 minutes. Add egg and baking soda and mix for another 2 minutes. Roll into walnut sized balls and create a crisscross (jump, jump) pattern with a fork. Bake for 10 minutes, until lightly browned. Cool on a baking sheet for two minutes, then transfer to paper towel to absorb the grease, actually they are not bad at all! ;D
Recipe makes about 16 – 3 inch cookies. Store in airtight container, drink with milk, it does the body good!
